I've experienced the same, but when I feel the waterhoses in the engine compartment, they seem to feel ok. The only thing you can do to get a reliable engine operating temp. is measuring the oiltemperature.
The thermostat needs to be fitted correctly so if a muppet has done it you'll have problems. If it's not that then it is the actual temperature pick-up that may be the problem.
Thermostat can normally be seen to be faulty if you floor it down the motorway to ram cold air in then the temp will go down.
I have had sooo many problems with thermostats it's untrue. I even had a dealership claim they has changed it when they blatantly hadn't!
A faulty (open) thermostat won't stop the engine reaching temp. it will just take longer. Take the temperature of the water if thats ok run the dash diagnostics which should show if the gauge is ok then you are only left with the sensor
What if the stat is faulty and stays closed longer than it should. Would this cause the car to overheat then suddenly go back to normal. thats what mine is doing.
