Great Project!

Just about to start the same on my 11 Turbo.

Where did you get the rollover jig? Will probably need the same for mine.

ROLLOVER SPIT, JIG, Golf, Beetle, Jetta, Derby, GTI, Scirocco, Passat, Caddy. | eBay

Very helpful old boy, comes already welded or to get the price lower you can weld it yourself. Also comes flat packed so it will fit in the car boot. Just got to give him some measurements of where it bolts to the car so he can make the right brackets for you.
I highly recommend one of these, if you have loads to do underneath!
